The wiping thing never made sense to me. If you have dirt on your hands or an apple, do you wipe them? No, you rinse them off. Thank you for validating my choice to rinse my mushrooms! If you cook them (which I always do), they will express water anyway. So how could you have a cooked soggy mushroom? :)
